Ingredients

  • 2 large chicken breasts: Trimmed and butterflied into thinner cutlets.
  • Salt & pepper to taste: For seasoning the chicken.
  • 1/4 teaspoon garlic powder: Adds subtle flavor.
  • Flour: For dredging the chicken.
  • 4 tablespoons butter, divided: For cooking the chicken and making the sauce.
  • 1 tablespoon olive oil: Helps brown the chicken.
  • 1/4 cup chicken broth or dry white wine: For deglazing the pan and adding flavor.
  • 1 tablespoon lemon juice + zest of 1 lemon: Provides a fresh, tangy taste.
  • 1 tablespoon brined capers, drained: Adds a burst of savory flavor.
  • 1/2 cup heavy/whipping cream: Makes the sauce rich and creamy.
  • Garnish (optional): Chopped parsley and/or freshly grated Parmesan cheese for added flavor and presentation.

Instructions

  1. Prepare the Chicken: Slice the chicken breasts lengthwise (butterfly them and then cut in half) to create 4 thinner cutlets. Trim any excess fat. Season the chicken generously with salt and pepper, and sprinkle with garlic powder. Dredge the chicken in flour until evenly coated.
  2. Cook the Chicken: In a skillet over medium-high heat, melt 2 tablespoons of butter with the olive oil. Once hot, cook the chicken pieces for about 4-5 minutes per side until golden brown. Transfer the chicken to a plate and set aside.
  3. Make the Sauce: Remove the pan from the heat and add the chicken broth, lemon juice, lemon zest, remaining 2 tablespoons of butter, and capers to the skillet. Scrape up any browned bits from the bottom of the pan.
  4. Finish the Sauce: Stir in the cream and return the pan to the heat. Once the sauce is bubbling, add the chicken back into the pan. Cook for another 5 minutes or until the chicken is cooked through and the sauce has reduced to your liking. If the sauce thickens too much, add more chicken broth.
  5. Garnish and Serve: Garnish with freshly chopped parsley and/or freshly grated Parmesan cheese if desired. Serve hot with your favorite sides.
