Ingredients
- 2 large chicken breasts: Trimmed and butterflied into thinner cutlets.
- Salt & pepper to taste: For seasoning the chicken.
- 1/4 teaspoon garlic powder: Adds subtle flavor.
- Flour: For dredging the chicken.
- 4 tablespoons butter, divided: For cooking the chicken and making the sauce.
- 1 tablespoon olive oil: Helps brown the chicken.
- 1/4 cup chicken broth or dry white wine: For deglazing the pan and adding flavor.
- 1 tablespoon lemon juice + zest of 1 lemon: Provides a fresh, tangy taste.
- 1 tablespoon brined capers, drained: Adds a burst of savory flavor.
- 1/2 cup heavy/whipping cream: Makes the sauce rich and creamy.
- Garnish (optional): Chopped parsley and/or freshly grated Parmesan cheese for added flavor and presentation.
Instructions
- Prepare the Chicken: Slice the chicken breasts lengthwise (butterfly them and then cut in half) to create 4 thinner cutlets. Trim any excess fat. Season the chicken generously with salt and pepper, and sprinkle with garlic powder. Dredge the chicken in flour until evenly coated.
- Cook the Chicken: In a skillet over medium-high heat, melt 2 tablespoons of butter with the olive oil. Once hot, cook the chicken pieces for about 4-5 minutes per side until golden brown. Transfer the chicken to a plate and set aside.
- Make the Sauce: Remove the pan from the heat and add the chicken broth, lemon juice, lemon zest, remaining 2 tablespoons of butter, and capers to the skillet. Scrape up any browned bits from the bottom of the pan.
- Finish the Sauce: Stir in the cream and return the pan to the heat. Once the sauce is bubbling, add the chicken back into the pan. Cook for another 5 minutes or until the chicken is cooked through and the sauce has reduced to your liking. If the sauce thickens too much, add more chicken broth.
- Garnish and Serve: Garnish with freshly chopped parsley and/or freshly grated Parmesan cheese if desired. Serve hot with your favorite sides.
Enjoy this delightful and easy-to-make Chicken Piccata, perfect for a quick weeknight dinner or a special occasion!
