Ingredients

  • 2 large chicken breasts: Trimmed and cut in half lengthwise to make 4 thinner cutlets.
  • Salt & pepper to taste: For seasoning the chicken.
  • 1/4 teaspoon garlic powder: Adds extra flavor.
  • Flour: For dredging the chicken.
  • 1 tablespoon olive oil: For searing the chicken.
  • 3 tablespoons butter, divided: For cooking the chicken and making the sauce.
  • 8 ounces cremini mushrooms, sliced thin: Adds a rich, earthy flavor.
  • 1 large clove garlic, minced: For aromatic depth.
  • 3/4 cup Marsala wine: For a sweet and savory sauce.
  • 1/2 cup heavy/whipping cream: For a creamy finish.

Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Season with salt, pepper, and garlic powder. Coat each piece in flour.
  2. Cook the Chicken: Heat the olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once the pan is hot, add the chicken and sear for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside (it will finish cooking in the sauce).
  3. Cook the Mushrooms: Add the remaining butter to the skillet. Add the mushrooms and cook for 3-5 minutes, stirring occasionally, until they are browned.
  4. Make the Sauce: Add the minced garlic and Marsala wine to the skillet. Let it bubble for 2-3 minutes to reduce slightly.
  5. Finish the Dish: Add the cream to the skillet, then return the chicken to the pan. Cook for another 4-5 minutes until the chicken is cooked through and the sauce has thickened. Season with additional salt and pepper if needed.
  6. Garnish and Serve: Optionally, sprinkle with chopped parsley before serving.

Notes:

  • If using smaller chicken breasts, you may not need to cut them in half, but adjust the cooking time accordingly.
  • Use semi-sweet or dry Marsala wine for the best flavor.
  • Ensure chicken reaches an internal temperature of 165°F using an instant-read thermometer.
