EASY CHEESY SCALLOPED POTATOES

Ingredients

  • 2 cups freshly grated cheddar cheese
  • 1 cup freshly grated Parmesan cheese
  • 3 pounds Russet or Yukon Gold potatoes
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 cups heavy/whipping cream
  • 1 teaspoon salt
  • Pepper to taste

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C) and position the rack in the middle.
  2. Prepare the Ingredients: Grate the cheddar and Parmesan cheeses. Peel the potatoes and use a mandoline slicer to cut them into 1/8-inch (3 mm) slices.
  3. Make the Cream Mixture: In a small saucepan over medium-high heat, melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant. Pour in the heavy cream, then add the salt and a pinch of pepper. Warm the mixture through, stirring occasionally. Just as it begins to boil, remove it from the heat.
  4. Layer the Potatoes: Grease a 9×13-inch baking dish. Arrange half of the potato slices in the bottom of the dish, overlapping slightly. Pour half of the cream mixture over the potatoes, then sprinkle with half of the cheddar and Parmesan cheeses. Repeat the process with the remaining potatoes, cream mixture, and cheeses, finishing with a layer of cheese on top.
  5. Bake: Cover the baking dish with foil and bake for 40 minutes. Remove the foil and continue baking for an additional 25-35 minutes, or until the potatoes are tender and a toothpick slides in easily. Cooking times may vary, so check for doneness earlier if your oven runs hot.
  6. Let Sit and Serve: Allow the scalloped potatoes to rest for 5-10 minutes before serving to let the flavors meld and the dish set.
