Ingredients

  • 2 large chicken breasts, cut in half lengthwise
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • Flour for dredging
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy/whipping cream
  • 2 cups (loosely packed) fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season each piece with garlic powder, salt, and pepper. Dredge the chicken in flour, ensuring all sides are coated.
  2. Cook the Chicken: In a skillet over medium-high heat, add the olive oil and 1 tablespoon of butter. Cook the chicken for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. Make the Sauce: Return the skillet to the heat and add the remaining tablespoon of butter and the minced garlic. Cook for about 30 seconds until the garlic is fragrant. Add the white wine, chicken broth, and Italian seasoning to the skillet. Let the mixture cook for 3-5 minutes until it has noticeably reduced.
  4. Add the Cream and Spinach: Pour in the heavy cream and let it bubble for 2 minutes. Stir in the fresh baby spinach and let it cook until wilted.
  5. Combine and Finish: Return the chicken to the skillet and cook over medium heat for another 4-5 minutes, or until the chicken is cooked through and the sauce has thickened. Sprinkle the freshly grated Parmesan cheese over the chicken and sauce before serving. Adjust the seasoning with additional salt and pepper if needed.
