Vegetarian White Bean Buffalo Dip

For the buffalo white bean base:

  • 1 (15-ounce) can white beans, rinsed and drained
  • 4 ounces cream cheese

  • 2/3 cup medium or hot buffalo sauce

For the mix-ins:

  • 1 (15-ounce) can white beans, rinsed and drained
  • ¾ cup shredded mozzarella cheese, divided
  • ¾ cup sharp cheddar cheese (or spicy cheddar for a kick), divided
  • ¼ cup diced green onions (green part only)

To garnish:

  • Fresh cilantro
  • Extra green onions

For serving:

  • Tortilla chips
  • Carrot sticks
  • Celery sticks

Instructions:

  1. Preheat the oven to 375°F. Grease a 9-inch oven-safe skillet or an 8×8-inch baking dish with nonstick cooking spray and set aside.
  2. In the bowl of a food processor, combine one can of drained and rinsed white beans, cream cheese, Greek yogurt, and buffalo sauce. Blend until smooth.
  3. Pour the buffalo bean mixture into the prepared skillet or pan.
  4. Stir in the remaining can of drained and rinsed beans, ¼ cup of mozzarella cheese, ¼ cup of cheddar cheese, and green onions. Spread the mixture evenly.
  5. Top with the remaining shredded cheeses and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden brown along the edges.
