Turkey Melt with Cheddar, Spinach, and Bacon

Ingredients:

  • 4 slices sourdough or any thick, crusty bread of your choice
  • 2 tablespoons honey mustard, divided
  • 2 slices white cheddar cheese, halved
  • 4 slices deli turkey
  • 1 medium tomato, thinly sliced
  • ½ cup fresh baby spinach, divided
  • 4 slices cooked bacon
  • 2 tablespoons butter, divided

Instructions:

  1. Spread ¼ tablespoon of honey mustard evenly on both sides of each bread slice.
  2. Cut each cheddar slice in half to create 4 smaller slices, placing one on each piece of bread.
  3. On two slices of bread, layer 2 slices of deli turkey, tomato slices, and ¼ cup of baby spinach.
  4. Top the other two slices of bread with 2 slices of crispy bacon.
  5. Assemble the sandwiches by pairing one slice with turkey, spinach, and tomato with a slice topped with bacon.
  6. Spread ½ tablespoon of butter on the outside of each sandwich slice.
  7. Heat a large skillet over medium heat. Once the skillet is hot, place the sandwiches in the pan and toast for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
  8. Serve warm and enjoy!
