  • 4 oz (about 1 1/3 cups) shredded mozzarella cheese
  • 1 1/2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt

  • Extra light olive oil or any high-heat oil for sautéing

Instructions

  1. Dice the chicken breasts into small pieces, about 1/3″ to 1/2″ thick, and set aside.
  2. In a medium bowl, combine the eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Mix well until smooth.
  3. Fold in the diced chicken, ensuring all pieces are coated. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor and texture.
  4. Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil.
  5. When the oil is hot, drop heaping tablespoons of the chicken mixture into the pan (a flat ice cream scoop works well). Flatten each fritter slightly with the back of a spoon.
  6. Cook the fritters uncovered for 3-4 minutes on the first side until golden brown. Flip and cook for another 3 minutes on the second side, until fully cooked and golden.
  7. Repeat with the remaining mixture, adding more oil if necessary.
  8. Transfer cooked fritters to a paper towel-lined plate to drain excess oil before serving.
