Ingredients

  • 1 tsp saffron threads
  • 2 cups basmati rice (e.g., Royal Basmati)
  • 1–2 tbsp kosher salt
  • 2 tbsp whole milk yogurt (Greek or regular)
  • 2 tbsp grape seed oil or any neutral-tasting oil
  • 1 cup dried cherries, finely chopped
  • Grated zest of 1 orange
  • 1/2 tsp ground cinnamon
  • 4–8 tbsp unsalted butter, cubed
  • 3 tbsp pistachios, roughly chopped for garnish

Instructions

1. Prepare the saffron

Mix saffron threads with 1 cup of very warm (not hot) water. Let it steep for at least 10 minutes to release its full aroma and color.

2. Rinse and par-cook the rice

Rinse the basmati rice under cool running water until the water runs almost clear. In a large pot, bring 8 cups of water and salt to a boil. Add the rice and cook for 5–6 minutes until al dente. Drain thoroughly.

3. Mix saffron rice

In a medium bowl, combine 1 cup of cooked rice with yogurt, grape seed oil, and 2 tbsp of saffron water. Mix well to coat the rice evenly.

4. Layer the rice

Spread the saffron-yogurt rice evenly on the bottom of a 10-inch lidded nonstick pot. Top with 1 cup of the remaining cooked rice, 2 tbsp dried cherries, a pinch of orange zest, and a pinch of cinnamon. Repeat layers, leaving a few tablespoons of cherries for garnish. Dot the top with cubed butter and pour the remaining saffron water over the rice. The dome in the middle is fine—it will form the signature tahdig crust.

5. Cook the tahdig

Wrap the pot lid with a kitchen towel and secure it. Cook on low heat for 25–30 minutes until the edges are golden and a crispy crust forms at the bottom. Be careful not to burn the rice.

6. Serve

Invert a large serving plate over the pot and carefully flip the pot to release the tahdig. Sprinkle the top with the reserved dried cherries and pistachios. Serve immediately.
