S’mores Ice Cream Sandwiches

Ingredients:

  • 32 Graham cracker squares
  • 1 Large box of instant chocolate pudding (6 servings)
  • 2 ½ cups Milk
  • 7 oz Marshmallow creme
  • 8 oz Container thawed Cool Whip
  • 4 oz Softened cream cheese

How To Make S’mores Ice Cream Sandwiches:

  1. Prepare the Chocolate Pudding Layer:
  • In a large mixing bowl, combine the instant chocolate pudding and milk. Whisk until smooth and let it set for 5 minutes.
  • Line the bottom of a 9×13 baking dish with aluminum foil or parchment paper.
  • Layer the chocolate pudding evenly in the bottom of the baking dish.

Prepare the Creamy Marshmallow Mixture:

    • In another mixing bowl, beat the cream cheese and marshmallow creme together until creamy and well incorporated.
    • Fold in the thawed Cool Whip until fully combined.

    Assemble the Ice Cream Sandwiches:

      • Spread the cream cheese and marshmallow mixture over the chocolate pudding layer in the baking dish.
      • Place the mixture into the freezer and let it set for a minimum of 6 hours.

      Slice and Serve:

        • Once set, slice the mixture into 16 squares.
        • Sandwich each square between two graham cracker squares before serving.

        • For a twist, try using chocolate graham crackers or cinnamon graham crackers for added flavor.
        • Customize your sandwiches by rolling the edges in mini chocolate chips, crushed nuts, or toasted coconut.
