Peanut Butter Frozen Yogurt Bars

Ingredients

  • 1 cup yogurt (dairy or dairy-free, make sure it’s not watery)
  • ½ cup natural peanut butter (stirred well to incorporate the oils)

  • 1 cup dairy-free or refined sugar-free chocolate baking chips
  • 2 tablespoons coconut oil
  • 5 popsicle sticks

Instructions

  1. In a bowl, combine the peanut butter, yogurt, and vanilla extract. Mix until smooth and creamy.
  2. Line a baking sheet with parchment paper.
  3. Using a 2-inch ice cream scoop, portion out the peanut butter and yogurt mixture onto the parchment paper.
  4. Insert a popsicle stick into the center of each portion and smooth the mixture over the stick with a spoon to even it out.
  5. Repeat with the remaining mixture, making as many bars as you can.
  6. Freeze the bars for 3-4 hours or until firm.
  7. While the bars freeze, melt the chocolate and coconut oil: Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring in between, until fully melted.
  8. Once the bars are frozen, dip each one into the melted chocolate and return them to the parchment paper. Freeze for another 10 minutes to allow the chocolate to harden.
  9. In a separate bowl, microwave 3 tablespoons of peanut butter and 1 teaspoon of coconut oil for 20 seconds, stirring to combine.
  10. Drizzle the melted peanut butter mixture over the chocolate-covered bars.
  11. Optionally, sprinkle with flaky salt for a touch of savory contrast.
  12. Freeze for an additional 10 minutes to set the peanut butter drizzle.
  13. Once the bars are fully frozen and set, remove them from the parchment paper and serve.
