Instructions

Prepare the Peach Mousse:

  1. Peel and dice the peaches (you should have about 3 cups). Immediately transfer them to a blender or food processor and add 2 tablespoons of fresh lemon juice to prevent discoloration. Blend the peaches until smooth, then set the puree aside in the blender jar.
  2. In a small saucepan, pour 1/4 cup cold water and sprinkle 1 tablespoon of gelatin on top. Let it sit for 5 minutes to soften. Once softened, stir in 1/3 cup of granulated sugar and heat the mixture over medium heat, stirring until the sugar dissolves (about 1 to 2 minutes). Remove from heat and set aside.
  3. Add the gelatin mixture to the peach puree and blend until fully incorporated. Cover and refrigerate the mixture for about 2 hours, or until it starts to thicken.
  4. Once thickened, beat the heavy whipping cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the peach mixture until smooth and well combined.
