This easy One-Pot Chicken and Rice is a simple, comforting meal perfect for busy weeknights. Tender chicken, creamy rice, and Parmesan cheese come together in just one skillet for a delicious dinner the whole family will love. Ready in under 30 minutes, it’s packed with flavor and requires minimal cleanup. Customize with your favorite veggies for a balanced, hearty dish.

Ingredients:
- 1½ lbs boneless, skinless chicken breasts, diced
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- 1 Tbsp Italian seasoning, divided
- ½ tsp onion powder
- Salt and pepper to taste
- 2½ cups chicken broth
- 1 cup uncooked long-grain white rice
- ¾ cup heavy cream
- ⅓ cup grated Parmesan cheese
Instructions:
- Prep the Chicken: Dice the chicken into bite-sized pieces and season with 1 teaspoon of Italian seasoning.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5 minutes until browned. Remove the chicken and set it aside.
- Sauté Garlic & Cook Rice: In the same skillet, add the minced garlic and sauté for 30 seconds. Pour in the chicken broth and stir in the uncooked rice. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes until the rice is tender.
- Add Cream & Cheese: Once the rice is cooked, stir in the heavy cream and grated Parmesan. Return the cooked chicken to the skillet and stir in the remaining Italian seasoning and onion powder. Taste and season with salt and pepper as needed.
Notes:
- You can use chicken thighs or tenderloins instead of chicken breasts.
- Feel free to add your favorite vegetables such as onions, peppers, broccoli, spinach, or mushrooms for extra flavor and nutrition.
- Long-grain white rice is recommended, but you can substitute with basmati or jasmine rice if desired.
- For added depth, try swapping some of the chicken broth with white wine.
