Melitzanosalata Recipe (Greek Eggplant Dip)

Melitzanosalata is a smoky, creamy, and refreshing Greek eggplant dip made with roasted eggplant, garlic, lemon, olive oil, and fresh herbs. Perfect as a spread or appetizer with pita or crusty bread, this traditional dish is light, healthy, and full of Mediterranean flavor.

Ingredients

  • 2 large eggplants
  • 1–2 large garlic cloves, minced
  • ¼ red onion, finely chopped (about ⅓ cup, plus more for garnish)
  • 1 cup fresh parsley, chopped and packed (plus extra for garnish)
  • Kosher salt and black pepper, to taste
  • ½ teaspoon ground cumin (optional)
  • ½ teaspoon crushed red pepper flakes (optional, adjust to taste)
  • 1 lemon, zested and juiced
  • ¼ cup extra virgin olive oil, plus more for drizzling
  • Kalamata olives, pitted and sliced, for garnish (optional)
  • Feta cheese, crumbled, for garnish (optional)

Instructions

  1. Prepare the eggplants – Leave them whole and pierce in a few places with a fork.
  2. Roast or smoke – Place the eggplants directly over a gas flame, on a grill, or under the broiler. Cook, turning occasionally with tongs, until the skin is deeply charred and the flesh feels soft and tender.
  3. Cool and drain – Place the roasted eggplants in a bowl to cool (they will release juices). Once cool enough to handle, peel off and discard the charred skins. Roughly chop the flesh and place in a colander to drain excess liquid for about 10 minutes.
  4. Mix the dip – Transfer the eggplant flesh to a mixing bowl. Add garlic, red onion, parsley, lemon juice, olive oil, salt, pepper, and spices (if using). Use a fork to mix and mash until well combined, leaving the texture slightly chunky.
  5. Chill (optional) – Cover and refrigerate briefly to allow flavors to meld.
  6. Serve – Spread onto a serving dish, drizzle with extra virgin olive oil, and garnish with lemon zest, parsley, red onions, olives, and feta. Serve with pita bread, warm flatbread, or crusty bread.
