Ingredients

For the Garlic Dijon Vinaigrette

  • 2 garlic cloves, minced
  • ½ tablespoon Dijon mustard

  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 green bell pepper, cored and chopped
  • 1 red bell pepper, cored and chopped
  • ½ English cucumber, diced
  • 1 cup red onion, chopped
  • 1 ½ tablespoons capers, drained
  • 1 cup fresh parsley, chopped
  • 10–15 fresh mint leaves, torn or gently chopped
  • 10–15 fresh basil leaves, torn or gently chopped

Instructions

  1. Make the vinaigrette – In a large serving bowl, whisk together the garlic, Dijon mustard, lemon juice, sugar, olive oil, salt, and black pepper until well combined.
  2. Prepare the beans – Drain and rinse kidney beans, cannellini beans, and chickpeas. Add them to the bowl with the vinaigrette.
  3. Add the vegetables and herbs – Toss in the bell peppers, cucumber, red onion, capers, parsley, mint, and basil. Mix until everything is evenly coated in the dressing.
