Dill Greek Yogurt Sauce

  • 1 cup fresh dill, chopped (stems removed)
  • 1 ¼ cups Greek yogurt
  • 1 tbsp extra virgin olive oil

Grilled Chicken

  • 10 garlic cloves, minced
  • ½ tsp paprika
  • ½ tsp allspice
  • ½ tsp ground nutmeg
  • ¼ tsp ground green cardamom
  • Salt and pepper, to taste
  • 5 tbsp extra virgin olive oil, divided
  • 8 boneless, skinless chicken thighs
  • 1 red onion, halved and thinly sliced
  • Juice of 2 lemons

Instructions

Make the Dill Greek Yogurt Sauce

  1. In a food processor, combine garlic, dill, Greek yogurt, olive oil, lemon juice, and cayenne pepper.
  2. Process until smooth and creamy. Taste and add salt if needed.
  3. Transfer to a small bowl, cover, and refrigerate until ready to serve.

Prepare the Chicken Seasoning

  1. In a small bowl, mix minced garlic, paprika, allspice, nutmeg, cardamom, and 3 tbsp olive oil.
  2. Pat chicken thighs dry and rub evenly with the garlic-spice mixture.

  1. In a large dish, combine sliced onions, lemon juice, and remaining 2 tbsp olive oil.
