    • Directions

Ingredients

  • 3 lbs boneless, skinless chicken thighs (about 10 pieces)
  • 1 tsp sea salt
  • ¼ tsp ground black pepper (or to taste)
  • 1 tsp Mrs. Dash seasoning (plain or garlic, or your favorite blend)
  • ½ tsp garlic powder
  • 1 Tbsp real mayonnaise
  • 1 medium onion, thickly sliced
  • BBQ sauce, for basting

Instructions

Marinate the Chicken:

  1. Season
Place chicken thighs in a large bowl or dish. Season both sides with sea salt, pepper, Mrs. Dash, and garlic powder.
  2. Coat with Mayo
Add the mayonnaise and mix until the thighs are evenly coated. This helps tenderize and lock in moisture.
  3. Add Onion
Toss in thick slices of onion and mix well.
  4. Marinate
Cover tightly and refrigerate for at least 6 hours or overnight for the best flavor.

Grill Method:

  1. Preheat and Oil
Preheat your grill and generously oil the grates.
  2. Grill Chicken
Place thighs on the grill, smooth side up. Cover and grill on low heat for 12–15 minutes, rotating once for grill marks.
  3. Baste and Flip
Brush the top with BBQ sauce, flip the chicken, baste the other side, and cook for another 12–15 minutes, rotating once more.
  4. Final Glaze
Flip again, brush with more BBQ sauce, and cook 1–2 minutes more.
  5. Rest
Remove from grill and let the chicken rest for 5–10 minutes before serving.

Oven-Baked Method:

  1. Preheat Oven
    Heat oven to 400°F (200°C).
  2. Bake First
Arrange marinated thighs in a single layer, smooth side up, on a large rimmed baking dish. Bake for 30 minutes.
  3. Add BBQ Sauce
Increase oven temperature to 450°F (230°C). Brush chicken generously with BBQ sauce on all sides and bake an additional 5 minutes, until sauce is slightly set and sticky.

Why You’ll Love This Recipe

  • Incredibly juicy and flavorful
  • Flexible cooking methods — grill or bake
  • Simple marinade with big flavor
  • Great for meal prep or gatherings
  • Customizable with your favorite BBQ sauce

Tips

  • Don’t skip the marinating — it adds depth and keeps the chicken moist.
  • Use a meat thermometer — internal temp should be 165°F (74°C).
  • Resting the meat after cooking helps retain juices.
  • For charred flavor in the oven, broil for 1–2 minutes at the end.

Variations and Substitutions

  • Different seasoning: Use Cajun, taco, or lemon-pepper seasoning blends.
  • Spicy version: Add crushed red pepper or a splash of hot sauce.
  • Bone-in thighs: Increase cooking time by 5–10 minutes.
  • No mayo? Use Greek yogurt or a bit of olive oil instead.
  • No BBQ sauce? Brush with teriyaki, honey mustard, or buffalo sauce.

FAQs

Can I use chicken breasts instead of thighs?
Yes, but they may be less juicy. Adjust the cook time accordingly.

How long can I marinate the chicken?
6 to 24 hours is ideal. Don’t exceed 2 days.

Can I freeze the marinated chicken?
Yes! Freeze raw marinated chicken in a zip bag for up to 3 months. Thaw overnight in the fridge before cooking.

Do I have to use mayonnaise?
It’s optional, but it adds moisture and richness without tasting like mayo.

Serving

  • Serve hot off the grill or oven with extra BBQ sauce on the side.
  • Great alongside corn on the cob, roasted veggies, baked beans, or potato salad.
  • For a lighter meal, pair with a fresh green salad or grilled vegetables.

Suggestions

  • Meal prep: Make a double batch and store leftovers for wraps or rice bowls.
  • Make it a BBQ platter: Add ribs, grilled corn, and coleslaw.
  • Try different sauces: Test out smoky chipotle, honey BBQ, or Korean-style gochujang glaze.
  • Use leftovers: Chop and toss into salads, sandwiches, or quesadillas.
