This Impossible Cheeseburger Pie recipe combines the classic flavors of a cheeseburger into an easy, savory pie that’s perfect for dinner. With layers of seasoned ground beef, crispy bacon, and a mix of cheddar and Pepper Jack cheese, all topped with a golden Bisquick crust, this dish is a family favorite. Whether you’re looking for a quick weeknight meal or a crowd-pleaser for a potluck, this cheeseburger pie is both simple to make and satisfying. It’s great for meal prep, reheats well, and can be customized with your favorite toppings like lettuce, tomatoes, or pickles.
Ingredients:
- 1 lb. lean ground beef
- 4 slices bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ teaspoon seasoned salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup ketchup
- ⅔ cup shredded cheddar cheese
- ⅔ cup shredded Pepper Jack cheese
- ¾ cup Bisquick baking mix
- 1 cup milk
- 2 eggs
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C) and lightly coat a 9-inch pie pan with non-stick cooking spray.
- Cook Meat and Veggies: In a large skillet over medium heat, cook the ground beef and chopped bacon together. When they are about halfway cooked, add the chopped onion. Continue to cook until the beef and bacon are browned and the onion has softened.
- Add Garlic and Seasonings: Reduce the heat to low and stir in the minced garlic. Cook for about a minute, stirring constantly. Drain any excess grease from the pan. Remove from heat and mix in the seasoned salt, black pepper, and ketchup. Let the mixture cool slightly.
- Assemble Pie: Stir in the shredded cheddar and Pepper Jack cheeses. Spoon the ground beef mixture evenly into the prepared pie pan.
- Make Bisquick Batter: In a medium bowl, whisk together the Bisquick baking mix, milk, and eggs until smooth. Pour the batter over the beef mixture in the pie pan.
- Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the pie to cool for 10 minutes before slicing and serving.
Notes:
- Grease Tip: To easily drain grease, tilt the pan and use a paper towel to soak it up—no need to risk spilling meat into the sink.
- Ground Beef: I prefer using 80/20 ground beef as it stays juicy and flavorful.
- Serving Suggestions: Serve with your favorite burger toppings on the side, like shredded lettuce, dill pickles, tomatoes, and onions.
- Cheese Options: Feel free to substitute other melty cheeses like Monterey Jack, Gouda, Swiss, Gruyere, Muenster, Provolone, mozzarella, or Colby Jack.
- Extra Cheese: For an extra cheesy pie, sprinkle more shredded cheese on top before baking.
- Storing Leftovers: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave on reduced power.
- Freezing: Freeze leftovers in a sturdy container for up to 2 months. Thaw overnight in the fridge and reheat in the microwave on reduced power.
