  • 1 envelope active dry yeast (about 3/4 tbsp or 2 1/4 tsp)
  • 2 large eggs, well beaten
  • 3 1/2 cups all-purpose flour, unsifted
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg (a large pinch)

For the Egg Wash:

  • 1 egg, well beaten with 1 tsp water

For the Glaze:

  • 1/2 cup powdered sugar
  • 2 1/2 tsp milk

Instructions

  1. Prepare the Raisins:
    • Combine 1/2 cup raisins, currants, or craisins with 1 cup boiling water in a small bowl. Let sit for 10 minutes, then drain well and set aside.
  2. Activate the Yeast:
    • In a measuring cup, mix 1/4 cup warm milk with 1/2 tsp sugar. Sprinkle the yeast on top, stir, and let sit at room temperature for 10 minutes, or until bubbly and doubled in volume.
  3. Combine Wet Ingredients:
    • In a large mixing bowl, mix 1/2 cup very warm milk, 1/2 cup sugar, softened butter, and salt until combined and butter is melted. Add the beaten eggs, proofed yeast mixture, cinnamon, and nutmeg. Stir to combine.
  4. Make the Dough:
    • Using a dough hook attachment, gradually mix in 3 1/2 cups flour, 1 cup at a time, until a soft dough forms. Knead on medium speed (speed 2) for 8-12 minutes, until the dough is smooth and elastic. It should slightly stick to the bowl but not to your fingers.

    • Pat the drained raisins dry with paper towels if needed. Knead them into the dough until evenly distributed.
