  • 2 cups salted roasted peanuts
  • 2 Tbsp butter

  1. Prepare pan and ingredients: Line a sheet pan with parchment paper. Measure out peanuts, butter, baking soda, and vanilla, and have them ready.
  2. Cook sugar mixture: In a medium saucepan, combine sugar and water. Stir in corn syrup. Cook over medium heat, stirring occasionally, until the mixture reaches a gentle boil.
  3. Monitor temperature: Attach a candy thermometer to the saucepan, making sure it is submerged in the liquid without touching the bottom. Continue cooking, stirring occasionally, until the mixture reaches 250°F (121°C).
  4. Add peanuts: Stir in the peanuts and continue cooking, stirring constantly, until the candy thermometer reaches 300°F (149°C).
  5. Finish the brittle: Remove from heat and immediately stir in butter, baking soda, and vanilla. The mixture will foam and change texture.
  6. Spread and cool: Carefully pour the hot mixture onto the prepared sheet pan. Use a knife or spoon to spread it into an even layer. Allow to cool completely, at least 30 minutes.
  7. Break and store: Once cooled, break into pieces and store in an airtight container.
