Homemade Hamburger Helper Recipe

Ingredients:

  • 1 pound extra lean ground beef
  • 1/2 medium onion, chopped
  • 2 heaping tablespoons tomato paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 cup uncooked elbow macaroni
  • 3 cups beef broth
  • 2 cups freshly grated cheddar cheese
  • Salt & pepper to taste

Instructions:

  1. In a large pot, cook the ground beef and chopped onions over medium-high heat until the beef is browned, about 7-10 minutes. Break up the meat as it cooks. If there is excess fat, spoon most of it out.
  2. Stir in the tomato paste, garlic powder, and chili powder until well combined.
  3. Add the beef broth and increase the heat to high. Once the mixture starts to boil, add the uncooked elbow macaroni.
  4. Reduce the heat to maintain a rapid simmer. Cook uncovered, stirring every couple of minutes, until the pasta is tender and most of the liquid is absorbed, about 13-15 minutes.
  5. While the pasta is cooking, grate the cheddar cheese.
  6. Remove the pot from the heat and stir in the grated cheese until melted and well combined. Season with salt and pepper to taste.
  7. Let the dish sit for a couple of minutes to absorb the flavors and sauce, then serve.

Notes:

  • This recipe serves 4-6 people, depending on portion size.
  • Cooking times and liquid absorption can vary. If the pasta is not done and the mixture is drying out, add more liquid (beef broth or water) 1/2 cup at a time until the pasta is cooked and the desired consistency is reached.
