Healthy Peanut Butter Rice Krispie Treats Recipe

Instructions:

  1. Line an 8×8-inch pan with parchment paper and set it aside.
  2. In a medium pot, melt the peanut butter, coconut oil, maple syrup, and vanilla extract over low heat. Stir constantly for about 1 minute until the mixture is smooth and well combined.
  3. If using collagen peptides, add them to the pot and mix well. Then, stir in the crispy brown rice cereal until it’s evenly coated.
  4. Pour the mixture into the prepared pan and use a spatula to press it down into an even layer.
  5. For the chocolate topping, melt the dark chocolate in the microwave in 30-second intervals, stirring in between, until completely smooth. Alternatively, you can melt the chocolate in a small saucepan over low heat.
  6. Pour the melted chocolate over the rice cereal mixture in the pan and gently tilt the pan to spread the chocolate evenly.
  7. Refrigerate the bars for about 30 minutes, or until the chocolate hardens and the bars are cool.
  8. Once chilled, sprinkle with fancy sea salt and cut into 16 bars.
  9. Store the bars in the fridge, covered, for up to 1 week. Let them sit at room temperature for about 5 minutes before serving for a softer texture.
