Garlic Butter Steak Bites Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 lb baby red and yellow potatoes, diced into ½-inch cubes
  • 3 large garlic cloves, minced
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • ¼ – ½ teaspoon red pepper flakes (adjust to taste)
  • 1 – 1¼ lb sirloin steak, cut into 1-inch cubes
  • Salt and pepper to taste

Instructions:

  1. Heat a large skillet over medium heat. Melt 1 tablespoon of butter with ½ tablespoon of olive oil.
  2. Add the diced potatoes, minced garlic, herbs, and red pepper flakes. Sauté for 5-6 minutes, until the potatoes are tender but still firm. Season with salt and pepper to taste.
  3. Remove the potatoes from the skillet and set them aside.
  4. Discard any burnt garlic or herbs from the skillet, then increase the heat to high. Once the skillet starts to smoke slightly, add the remaining olive oil and butter.
  5. Carefully add the steak bites to the hot skillet. Sear the steak undisturbed for 1 minute, allowing a nice crust to form.
  6. Continue cooking the steak, turning occasionally, until browned on all sides and cooked to your desired doneness (4-6 minutes). Season with salt and pepper to taste.
  7. Return the potatoes to the skillet and cook for 1 additional minute, until heated through. Serve immediately.

Other Steak Cuts to Use:

  1. Ribeye: Tender and flavorful due to its marbling, ribeye is perfect for bite-sized steak pieces.
  2. New York Strip: Slightly leaner but still flavorful, this cut works well for searing and bite-size dishes.
  3. Tenderloin (Filet Mignon): Very tender, but less fatty, for a melt-in-your-mouth texture.
  4. Flank or Skirt Steak: Though slightly tougher, these cuts are excellent when sliced thinly and cooked quickly.

How to Make Garlic Butter Steak Bites:

  1. Prep the steak by cutting it into 1-inch cubes. Season with salt and pepper.
  2. Cook the potatoes: Heat butter and olive oil in a skillet, then sauté diced potatoes with garlic and herbs until tender.
  3. Sear the steak: Turn the heat up to high, add more butter, and sear the steak bites on all sides until they are brown and cooked to your desired doneness.
  4. Combine and finish: Return the potatoes to the skillet, toss everything together, and serve immediately.

What to Serve with Steak Bites:

  1. Garlic Mashed Potatoes or roasted vegetables like Brussels sprouts or asparagus.
  2. Creamy polenta or a fresh garden salad with a tangy vinaigrette to balance the richness.
  3. Crusty bread or garlic bread to soak up the extra garlic butter sauce.
  4. Grilled or roasted corn on the cob for a hearty, summery side.
