Ingredients

  • 30 oz. frozen hash browns, thawed (diced or shredded)
  • 2 cups sour cream
  • 1 (10.5 oz.) can cream of chicken soup (or homemade)
  • 10 Tbsp. unsalted butter, divided and melted
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 tsp. dried minced onion
  • 2 cups shredded cheddar cheese
  • 2 cups corn flakes cereal

Instructions

  1. Thaw the Hash Browns:
If your hash browns are frozen, thaw them in the refrigerator overnight. For a quicker option, spread them on a baking sheet and warm in the oven at 200°F for about 20 minutes until fully thawed.
  2. Preheat the Oven:
Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  3. Make the Creamy Mixture:
In a large bowl, combine sour cream, cream of chicken soup, 6 tablespoons of melted butter, salt, pepper, and dried minced onion. Mix until smooth and well blended.
  4. Add the Potatoes and Cheese:
Stir in the thawed hash browns and shredded cheddar cheese until evenly coated. Spread the mixture evenly in the prepared baking dish.
  5. Prepare the Topping:
Place corn flakes in a large zip-top bag and gently crush them using your hands or a rolling pin. Pour in the remaining 4 tablespoons of melted butter and mix to coat evenly.
  6. Top and Bake:
Sprinkle the buttery cornflake mixture over the potatoes. Bake uncovered for 40–50 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
  7. Serve:
Allow to cool for a few minutes before serving. These potatoes pair beautifully with baked ham, roasted turkey, or grilled steak.

Why You’ll Love This Recipe

  • Comforting and satisfying with every bite.
  • Simple ingredients and easy prep — no fancy steps required.
  • Perfect for potlucks, holidays, or family dinners.
  • Crispy topping and creamy interior make an irresistible combo.

Tips

  • Thaw completely: Cold or partially frozen hash browns can cause uneven baking.
  • Crush cornflakes lightly: You want a mix of small and medium crumbs for texture.
  • Don’t overbake: Once golden and bubbly, remove from the oven to keep it creamy inside.
  • Cheese options: Use sharp cheddar for bolder flavor, or mix in Monterey Jack for extra creaminess.

Variations and Substitutions

  • Soup substitute: Replace cream of chicken with cream of mushroom for a vegetarian version.
  • Add protein: Stir in diced ham, shredded chicken, or cooked bacon.
  • Topping swap: Use crushed Ritz crackers or potato chips instead of cornflakes.
  • Healthier twist: Use Greek yogurt instead of sour cream and reduced-fat cheese.

FAQs

Can I make this ahead of time?
Yes! Assemble the casserole (without the topping), cover, and refrigerate for up to 24 hours. Add the topping just before baking.

Can I freeze it?
Absolutely. Prepare as directed (without baking), wrap tightly, and freeze for up to 3 months. Thaw overnight in the fridge before baking.

What if I don’t have frozen hash browns?
You can use freshly shredded potatoes — just be sure to rinse and dry them well before mixing.

Why are they called “Funeral Potatoes”?
This comforting casserole got its name because it’s often served at gatherings after funerals, though it’s popular at all kinds of family events and holidays today.

Serving and Suggestions
