Ingredients
- 8 ounces pasta (such as linguine)
- 1 tablespoon olive oil
- 3 tablespoons butter
- 5-6 cloves garlic, minced
- 12 ounces little tomatoes (grape, cherry, etc.), halved
- 1/4 teaspoon Italian seasoning
- 2 cups fresh baby spinach, packed
- 1/2 cup freshly grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve 1/4 cup of the pasta water before draining. - Prepare the Sauce:
While the pasta is cooking, heat olive oil and butter in a skillet over medium-high heat. Add minced garlic, halved tomatoes, and Italian seasoning to the skillet. Cook until the tomatoes are very soft, about 4-5 minutes, adjusting the heat as needed to prevent the liquid from evaporating completely. - Add Spinach:
Stir in the fresh baby spinach and cook for 1-2 minutes until wilted. - Combine Pasta and Sauce:
Add the reserved pasta water to the skillet, then drain the cooked pasta and add it to the skillet as well. Toss everything together to coat the pasta in the sauce. Ensure the Parmesan cheese melts into the sauce smoothly. - Season and Serve:
Season with salt and pepper to taste. Serve the fresh spinach and tomato pasta immediately.
Notes:
- Use any variety of tomatoes weighing about 12 ounces.
- For added flavor, fresh basil makes a great addition to this dish.
