Ingredients:
- 8 ounces pasta (such as linguine)
- 1 tablespoon olive oil
- 3 tablespoons butter
- 5-6 cloves garlic, minced
- 12 ounces grape or cherry tomatoes, halved
- 1/4 teaspoon Italian seasoning
- 2 cups fresh baby spinach, packed
- 1/2 cup freshly grated Parmesan cheese
- Salt & pepper, to taste
Instructions:
- Boil a salted pot of water for the pasta and cook it al dente according to the package directions.
- When the pasta is about 10 minutes away from being cooked, start making the sauce. Heat the olive oil and butter in a skillet over medium-high heat.
- Add the garlic, tomatoes, and Italian seasoning to the skillet. Cook until the tomatoes are very soft, about 4-5 minutes. You may need to lower the heat to prevent the liquid from bubbling off completely.
- Stir in the spinach and cook for 1-2 minutes until wilted.
- Reserve 1/4 cup of the hot pasta water and add it to the skillet. Drain the pasta and add it to the skillet along with the Parmesan cheese. Toss the pasta with the sauce until the cheese is melted and the pasta is well-coated.
