Ingredients

  • 12 large eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
  • 12 English muffins
  • 12 slices cheddar cheese (or your favorite cheese)

Instructions

  1. Prepare the Eggs:
Preheat the oven to 325°F (160°C). Grease a 9×13-inch baking pan generously.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined (an electric mixer makes this easier).
  2. Bake the Eggs:
Pour the egg mixture into the prepared pan and bake for 18–22 minutes, just until the center is set. Avoid overbaking to keep the eggs soft and tender.
Let the eggs cool completely, then cut into 12 equal squares.
  3. Assemble the Sandwiches:
Slice the English muffins in half. Layer the bottom half with an egg square, a slice of cheese, and your choice of cooked meat (bacon, sausage, ham, or Canadian bacon).
Top with the other muffin half.
  4. To Serve Immediately:
Place the assembled sandwiches on a baking sheet and heat at 350°F (175°C) for about 5 minutes, or until the cheese melts.

To Freeze

  1. Wrap each sandwich individually in foil, wax paper, or parchment paper.
  2. Place the wrapped sandwiches into a freezer-safe resealable bag.
  3. Freeze for up to 1 month.

To Reheat

  • Best Method (Fridge Overnight):
Thaw overnight in the refrigerator. Remove the wrapping and cover the sandwich with a paper towel.
    • Microwave for 40 seconds–1 minute on defrost (50% power).
    • Flip and heat for another 10–30 seconds on high until warmed through.
  • Oven Method:
Reheat in the oven at 350°F (175°C) for 10–15 minutes, or use a toaster oven for a crispier texture.

Why You’ll Love This Recipe

  • Perfect for busy mornings — grab, heat, and go!
  • Customizable with endless meat, cheese, and bread options.
  • Saves time and money — make a week’s worth of breakfasts in one go.
  • Tastes freshly made, even after freezing.

Tips

  • Don’t overbake the eggs — slightly underdone eggs will stay tender after reheating.
  • Let the eggs cool completely before assembling to prevent soggy muffins.
  • Use full-sized English muffins so the ingredients fit snugly.
  • Label and date the freezer bag for easy tracking.

Variations and Substitutions

  • Meat Options: Try turkey bacon, vegetarian sausage, or omit the meat for a veggie sandwich.
  • Cheese Choices: Swap cheddar for Swiss, provolone, or pepper jack.
  • Bread Alternatives: Use bagels, croissants, or whole-grain sandwich thins.
  • Add Veggies: Add sautéed spinach, peppers, or mushrooms inside for extra nutrients.

FAQs

Can I use egg whites only?
Yes — use 2 egg whites per whole egg for a lighter version.

How long do they last in the freezer?
Up to 1 month for best quality, though they can last up to 2 months if tightly sealed.

Can I reheat them directly from frozen?
Yes — microwave on defrost for 1½–2 minutes, then on high for 30–60 seconds.
