Ingredients

Italian Seasoning Rub:

  • 2 cloves garlic, minced
  • 2 teaspoons kosher salt
  • Zest and juice of 1 lemon (quartered)
  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon freshly ground black pepper

Chicken:

  • 1 whole chicken (about 4 lbs)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon Italian seasoning
  • 1 small onion, peeled and quartered

Instructions

Prepare the Rub

  1. Mash minced garlic and salt on a cutting board to form a paste.
  2. Transfer to a small bowl and mix in lemon juice, lemon zest, olive oil, Italian seasoning, and black pepper.

Dry and Season the Chicken

  1. Pat chicken dry inside and out with paper towels for crisp skin.
  2. Loosen skin from breast and legs by gently sliding fingers under the skin.
  3. Rub 1/3 of the Italian seasoning paste under the skin, 1/3 on the outside, and 1/3 inside the cavity.
  4. Stuff the cavity with remaining lemon quarters and onion.

Truss the Chicken (Optional)

  1. Tuck wings under the chicken.
  2. Use kitchen twine to tie legs together and cross over the breast. Trussing helps even cooking but can be skipped if unavailable.

Air Dry the Chicken (Optional)

  1. Place chicken uncovered in the refrigerator for 24 hours.
    • Enhances crispiness and allows seasoning to penetrate the meat for juicier chicken.

Preheat the Oven

  1. Preheat oven to 375°F (190°C).

Season Again and Roast

  1. Rub chicken with olive oil and sprinkle with remaining salt and Italian seasoning.
