  • 1 ½ pounds ground beef

Instructions:

  1. In a Dutch oven or heavy stockpot, heat over medium heat and brown the ground beef. When the beef is halfway browned, add the chopped onion and cook until the beef is fully browned and the onion is softened (about 5-6 minutes). Drain any excess grease.
  2. Reduce the heat to low. Add the minced garlic, oregano, parsley, rosemary, and thyme. Stir constantly and cook for about 1 minute to allow the flavors to develop.
  3. Add the chopped potatoes, carrots, and fire-roasted tomatoes to the pot, stirring to combine.
  4. In a separate bowl, whisk together the beef broth and tomato paste. Stir the mixture into the pot and bring it to a simmer. Cover and cook for 15 minutes.
  5. Add the frozen peas and continue simmering, covered, until the potatoes and carrots are tender. Season with salt and pepper to taste, then serve hot.
