Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 cup finely chopped dill pickles
  • 1 medium carrot, peeled and grated
  • 3 large red potatoes (with skins), diced
  • 2.5 cups chicken broth (preferably low-sodium)
  • 1 cup pickle juice
  • 3 teaspoons Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 handful fresh dill, chopped
  • 3/4 pound ham, diced
  • 1/2 cup sour cream
  • 1 tablespoon flour
  • Salt & pepper to taste

Instructions

  1. Sauté Vegetables:
    Heat the olive oil in a soup pot over medium-high heat. Add the chopped onion and grated carrot, and sauté for about 5 minutes until they start to soften.
  2. Add Main Ingredients:
    Add the chopped dill pickles, diced potatoes, chicken broth, pickle juice, Worcestershire sauce, minced garlic, chopped fresh dill, and diced ham to the pot. Bring the mixture to a boil, then reduce the heat to medium-low. Let it simmer for 15-20 minutes, or until the potatoes are tender.
  3. Incorporate Sour Cream and Flour:
    In a small bowl, mix the flour into the sour cream until smooth. Gradually stir this mixture into the soup, ensuring it’s well combined. Continue to cook the soup for an additional 5 minutes, allowing it to thicken slightly.
  4. Season and Serve:
    Season the soup with salt and pepper to taste. If desired, garnish with extra fresh dill before serving.

Notes:

  • This soup can be salty depending on the pickle juice and ham used. Opt for low-sodium chicken broth to control the salt level.
  • If using dried dill instead of fresh, start with 1 teaspoon and adjust to taste.
  • This recipe serves 4-6 people.
