- 14 ounces tomato puree (Passata)

- ¼ teaspoon black pepper (to taste)
- 1 teaspoon dried Italian herbs
- 1 teaspoon sugar (optional)
For the Topping:
- 8 ounces mozzarella cheese (sliced or shredded)
- ⅓ cup freshly shredded Parmesan cheese
- 2 tablespoons chopped fresh basil or parsley
Instructions
Prepare the Chicken:
- In a shallow dish, whisk together eggs, minced garlic, chopped parsley, salt, and pepper. Add the chicken fillets, ensuring they are evenly coated with the egg mixture. Cover and marinate for at least 15 minutes (or overnight for deeper flavor).
- In another shallow dish, mix Panko breadcrumbs, Italian breadcrumbs, Parmesan cheese, garlic powder, and onion powder. Coat each chicken fillet with the breadcrumb mixture, pressing lightly to adhere.
