Ingredients

  • 1 small yellow onion, diced
  • 3 stalks of celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves of garlic, minced
  • 1/3 cup of all-purpose flour (40 grams)
  • 2 cups of chicken stock
  • 2 pounds of russet potatoes, peeled and diced (907 grams)
  • 2 cups of whole milk (236.588 ml)
  • Salt and pepper to taste
  • Shredded cheddar cheese for topping
  • Diced scallions for topping
  • Bacon pieces for topping

2. Cooking the Bacon

In a large, heavy-bottomed stockpot, start by cooking 6 slices of thick-cut bacon until they’re just crispy. It’s important not to let them get overly brown at this stage, as they’ll continue to cook as you proceed with the recipe.

3. Adding the Vegetables

Once the bacon is cooked, add in the diced onion, celery, carrots, and minced garlic. Cook the vegetables until they’re soft, which should take around 5 to 7 minutes. This step helps to build a flavorful base for the soup.

4. Incorporating the Flour and Chicken Stock

Stir in the flour into the vegetable mixture and allow it to cook for about 30 seconds. Then, very slowly add the chicken stock, whisking continuously to prevent any lumps from forming. Bringing the mixture to a boil, ensuring a smooth consistency.

5. Simmering with Potatoes

Add the diced potatoes to the pot and reduce the heat to a simmer. Stir the soup regularly and cook until the potatoes are fork-tender, which typically takes around 20 to 30 minutes. It’s important to maintain a low heat to prevent excessive evaporation of the liquid.

6. Adding the Creamy Touch

Once the potatoes are cooked, stir in the whole milk and allow it to cook through for an additional 1 to 2 minutes. This step adds richness and creaminess to the soup, elevating its texture and flavor.

7. Serving and Garnishing

To serve, ladle the creamy potato soup into bowls and top each serving with shredded cheddar cheese, crispy bacon pieces, and diced scallions. The combination of flavors and textures creates a truly indulgent experience that’s sure to please the palate.
