Ingredients:
- 1 pound pork tenderloin, cut into 1″ medallions
- Salt & pepper, to taste
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
- 8 ounces cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon Italian seasoning or Herbs de Provence
- 1/4 cup chicken or beef broth (or dry white wine or sherry)
- 3/4 cup heavy cream or whipping cream
Instructions:
- Trim any excess fat and the silver skin from the pork tenderloin, then cut it into 1″ medallions. Season each piece with salt and pepper.
- Heat the olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Allow the pan to warm up for a few minutes.
- Sear the pork medallions for 3 minutes per side, then transfer them to a plate and set aside.
- Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the mushrooms and cook for 5-6 minutes, stirring occasionally, until the mushrooms release their water and it evaporates.
- Stir in the garlic, Dijon mustard, Italian seasoning, and chicken broth. Let the mixture bubble for about a minute.
- Add the cream and let it bubble for another minute.
- Return the pork medallions to the skillet and cook for an additional 3-5 minutes, or until the pork is cooked through and the sauce has reduced and thickened. If the sauce is bubbling too vigorously, reduce the heat slightly.
