Ingredients

  • 2 large chicken breasts
  • Salt & pepper to taste
  • Flour for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces mushrooms (cremini or white), sliced
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy/whipping cream

Instructions

  1. Prepare the Chicken:
    Cut the chicken breasts in half lengthwise to create four thinner cutlets. Season with salt and pepper, then dredge each piece in flour, shaking off any excess.
  2. Cook the Chicken:
    Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken cutlets and cook for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  3. Sauté the Mushrooms:
    In the same skillet, add butter and let it melt. Add the sliced mushrooms and Italian seasoning. Sauté the mushrooms until they release their moisture and develop a golden sear, stirring occasionally. Remove the mushrooms from the pan and set aside with the chicken.
  4. Prepare the Sauce:
    Add minced garlic, chicken broth, lemon juice, and Dijon mustard to the skillet. Stir well, scraping up any browned bits from the bottom of the pan. Let the sauce simmer and reduce by half, about 3-4 minutes.
  5. Finish the Dish:
    Pour in the heavy cream and return the chicken and mushrooms to the skillet. Cook for another 5 minutes or until the chicken is cooked through and the sauce has thickened slightly. Season with additional salt and pepper to taste.
  6. Serve:
    Serve the creamy mushroom chicken hot, garnished with fresh herbs if desired.
