Ingredients:
- 8 ounces uncooked pasta
- 2 chicken breasts, cut into bite-sized pieces
- Salt & pepper, to taste
- Flour, for dredging
- 1 tablespoon butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/3 cup chicken broth
- 1 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon Italian seasoning
- 1 cup heavy cream or whipping cream
- 5 ounces fresh baby spinach
- 1/2 cup freshly grated Parmesan cheese
Instructions:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta is cooking, season the chicken pieces with salt and pepper, then dredge them in flour.
- Heat the butter and olive oil in a skillet over medium-high heat. Once hot, add the chicken and cook until it’s no longer pink on the outside. Remove the chicken from the skillet and set aside.
- Remove the skillet from the heat and add the minced garlic, chicken broth, lemon juice, Dijon mustard, and Italian seasoning. Return the skillet to the heat and let the mixture bubble for about a minute, scraping up any browned bits from the bottom of the skillet.
- Add the chicken back to the skillet along with the cream and spinach. Cook for about 5 minutes, or until the chicken is cooked through and the spinach is wilted. If the sauce thickens too quickly, reduce the heat.
- Add the cooked pasta to the skillet and toss to coat with the sauce. Stir in the Parmesan cheese.
- Taste and adjust the seasoning with more salt and pepper, if needed.
