Ingredients

  • 4 lb pork shoulder or pork butt
  • 2 tablespoons oil (optional if searing)
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 12 ounces Coca-Cola (not diet)
  • Barbecue sauce, for coating the meat (optional)

Instructions

1. Prep the Pork

Trim any excess fat from the pork shoulder and cut it into 4 large pieces.

2. Make the Spice Rub

In a small bowl, mix together the brown sugar, chili powder, onion powder, garlic powder, cumin, salt, and black pepper. Rub the mixture evenly over all sides of the pork.
(You can do this step the night before for deeper flavor.)

3. Optional Sear

For extra flavor and texture, heat 2 tablespoons of oil in a large Dutch oven over medium-high heat. Add the pork pieces and sear briefly on all sides until lightly browned.


Oven Method

  1. Preheat your oven to 300°F (150°C).
  2. Pour the Coca-Cola around the pork in the Dutch oven.
  3. Cover with a lid and bake for 3 hours.
  4. Remove the lid and cook uncovered for an additional 1–2 hours, or until the pork is tender and easily shreds with a fork.
  5. Remove from the pot, shred on a cutting board, and toss with barbecue sauce if desired.

Slow Cooker Method

  1. Place the seasoned pork into your slow cooker.
  2. Pour the Coca-Cola around the meat.
  3. Cover and cook on LOW for 8 hours (recommended) or HIGH for 4–5 hours, until the pork is tender and pulls apart easily.
  4. Shred and toss with barbecue sauce before serving.

Instant Pot Method

  1. Place pork into the Instant Pot and pour in the Coca-Cola.
  2. Close the lid, set to Manual / High Pressure, and cook for 70 minutes.
  3. Allow pressure to release naturally for 15 minutes, then remove the lid.
  4. Shred the pork and mix with a little barbecue sauce if desired.
