Ingredients

For the Chicken Marinade

  • ¾ tablespoon ground cumin
  • ¾ tablespoon turmeric powder
  • ¾ tablespoon ground coriander
  • ¾ tablespoon garlic powder
  • ¾ tablespoon paprika
  • ½ teaspoon ground cloves
  • ½ teaspoon cayenne pepper (add more for extra heat)
  • Salt, to taste
  • 8 boneless, skinless chicken thighs
  • 1 large onion, thinly sliced
  • Juice of 1 large lemon
  • ⅓ cup high-quality extra virgin olive oil

To Serve

  • 6 pita pockets
  • Tahini sauce or Greek tzatziki sauce
  • Baby arugula
  • 3-ingredient Mediterranean salad
  • Pickles or Kalamata olives (optional)

Instructions

  1. Prepare the spice mix
    In a small bowl, combine the cumin, turmeric, coriander, garlic powder, paprika, and ground cloves. Set aside.
  2. Season the chicken
    Pat chicken thighs dry and season both sides with salt. Slice into bite-sized strips.
  3. Marinate
    Place the chicken in a large bowl. Add the prepared spice mix and toss to coat evenly. Mix in the sliced onions, lemon juice, and olive oil. Toss again until well coated. For a crispier finish, move the pan to the top rack and broil briefly, watching closely to avoid burning.
  5. Prepare the accompaniments
    While the chicken is roasting, make tahini or tzatziki sauce and the 3-ingredient Mediterranean salad. Set aside.
  6. Assemble and serve
    Cut open the pita pockets and spread a layer of sauce inside. Fill with roasted chicken shawarma, arugula, Mediterranean salad, and pickles or olives if desired. Serve immediately.
