Cheesy Pork and Potato Bake Recipe

This Cheesy Pork and Potato Bake combines tender potatoes, seasoned pork, and a rich, creamy sauce, topped with golden, melted mozzarella. Ingredients

  • 3 lb Yukon or Russet potatoes
  • 1 bay leaf
  • ½ Tbsp salt
  • 3 to 5 Tbsp olive oil (for cooking pork, onion, and garlic)
  • 1 lb pork (cut into small chunks)
  • 1 Tbsp soy sauce
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup heavy whipping cream
  • ¼ cup fresh dill (chopped)
  • 1 Tbsp Mrs. Dash seasoning
  • 1 cup grated mozzarella cheese

Instructions

  1. Prep the Potatoes: Wash, peel, and cut the potatoes into large chunks. Place them in a pot with cold water, adding the bay leaf and salt. Bring to a boil and cook for about 15 minutes or until the potatoes are fork-tender but not fully cooked. Drain and set aside in a large bowl.
  2. Cook the Pork: While the potatoes are cooking, heat a little olive oil in a large skillet over medium-high heat. Add the pork and cook for 7-10 minutes. Halfway through cooking, add the soy sauce and stir well. Once the pork is browned, remove from heat.
  3. Sauté the Vegetables: In the same skillet, add more olive oil and sauté the minced garlic over medium-high heat until it starts to brown (be careful not to burn it). Remove garlic from the skillet and set aside. In the same skillet, add the diced onion and sauté until golden brown.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C).
  5. Assemble the Bake: In a large mixing bowl, combine the cooked potatoes, sautéed onions, garlic, fresh dill, heavy whipping cream, and Mrs. Dash seasoning. Stir gently to mix everything together.
  6. Bake the Mixture: Transfer the potato mixture into a large rectangular baking dish and top with the cooked pork. Cover the dish with foil and bake for 15 minutes.
  7. Top with Cheese: While the potatoes are baking, shred 1 cup of mozzarella cheese. After 15 minutes, remove the foil and sprinkle the cheese over the top of the potatoes. Set the oven to broil and return the dish to the oven for an additional 2 minutes or until the cheese is melted and bubbly.
  8. Serve and Enjoy: Remove from the oven and serve hot. This dish pairs wonderfully with canned pickled tomatoes for a tangy complement.
