Ready in just 30 minutes, it’s a flavorful and nutritious option for busy weeknights. Enjoy this delicious twist on traditional cabbage rolls with your family tonight!

Ingredients:

  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 3 cups chopped cabbage
  • 1 (14 ounce) can tomato sauce
  • 1 (28 ounce) can fire-roasted diced tomatoes with juices
  • 4 cups beef broth
  • 1 cup water
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 2/3 cup uncooked white rice (such as jasmine)
  • Salt & pepper, to taste

Instructions:

  1. In a large soup pot, cook the ground beef and onion over medium-high heat, stirring occasionally, until the beef is browned, about 8 minutes. Drain excess fat if necessary.
  2. Add the garlic to the pot and cook for about 1 minute.
  3. Stir in the chopped cabbage, tomato sauce, diced tomatoes with their juices, beef broth, water, paprika, Italian seasoning, and rice.
  4. Increase the heat to high and bring the soup to a boil. Once it starts to boil, stir well, then reduce the heat to a simmer. Cover the pot with the lid slightly ajar.
  5. Let the soup simmer for 15-20 minutes, or until the rice is cooked, stirring occasionally to prevent the rice from sticking to the bottom of the pot.
  6. Season with salt and pepper to taste. Serve immediately.

Notes:

  • Leftovers may thicken as the rice absorbs more liquid. Add additional beef broth when reheating to reach the desired consistency.
