Buttery Mashed Cauliflower

Try this smooth and flavorful mashed cauliflower for a guilt-free comfort food experience.

Ingredients

  • 1 cauliflower, cut into florets (about 3 pounds or 1½ kg)
  • 3 tablespoons unsalted butter
  • 3 tablespoons sour cream
  • 6 cloves garlic, divided
  • ¼ cup Parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place the cauliflower florets in a steamer over a large pot of boiling water. Steam for about 15 minutes until tender. Alternatively, you can boil the cauliflower in salted water for 10 minutes or until fork-tender. Drain well and set aside, keeping it covered.
  2. In the same pot, melt the butter over medium-high heat. Sauté the garlic until fragrant, about 1 minute.
  3. In a food processor, blend the steamed cauliflower and garlic on high until smooth. Depending on the size of your food processor, you may need to do this in batches.
  4. Transfer the smooth cauliflower mixture back to the pot with the sautéed garlic. Stir in the Parmesan cheese and sour cream, then season with salt and pepper to taste.

Notes

  • For a quicker prep, use cauliflower rice instead of whole cauliflower. Steam the cauliflower rice or sauté it in a pan with a bit of water until tender, then proceed with the recipe as directed.
