Ingredients
- 1 cauliflower, cut into florets (about 3 pounds or 1½ kg)
- 3 tablespoons unsalted butter
- 3 tablespoons sour cream
- 6 cloves garlic, divided
- ¼ cup Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Place the cauliflower florets in a steamer over a large pot of boiling water. Steam for about 15 minutes until tender. Alternatively, you can boil the cauliflower in salted water for 10 minutes or until fork-tender. Drain well and set aside, keeping it covered.
- In the same pot, melt the butter over medium-high heat. Sauté the garlic until fragrant, about 1 minute.
- In a food processor, blend the steamed cauliflower and garlic on high until smooth. Depending on the size of your food processor, you may need to do this in batches.
- Transfer the smooth cauliflower mixture back to the pot with the sautéed garlic. Stir in the Parmesan cheese and sour cream, then season with salt and pepper to taste.
Notes
- For a quicker prep, use cauliflower rice instead of whole cauliflower. Steam the cauliflower rice or sauté it in a pan with a bit of water until tender, then proceed with the recipe as directed.
