These easy Buckeye Bars are the perfect combination of creamy peanut butter and rich chocolate. No-bake and simple to make, they’re ideal for holiday desserts, parties, or anytime you need a sweet fix. With just a few ingredients, this peanut butter and chocolate dessert is always a crowd favorite!

Ingredients:
- 1/2 cup softened butter
- 3 cups creamy peanut butter
- 4 cups powdered sugar
- 1 1/2 tsp pure vanilla extract
For the Chocolate Ganache:
- 12 oz (2 cups) semi-sweet chocolate chips
- 1 tbsp butter
Instructions:
Make the Peanut Butter Layer:
- In a large mixing bowl, combine the softened butter, peanut butter, powdered sugar, and vanilla extract. Beat the mixture with an electric mixer until smooth. The dough will be thick and slightly crumbly.
Prepare the Pan:
- Line a 9×13-inch baking dish with parchment paper. Press the peanut butter mixture firmly into the bottom of the pan, ensuring an even layer.
Prepare the Chocolate Ganache:
- In a microwave-safe bowl, combine the chocolate chips and 1 tablespoon of butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Assemble the Bars:
- Pour the melted chocolate ganache over the peanut butter layer, using a spatula to spread it evenly across the surface.
Chill:
- Refrigerate the bars for 1 hour. Once set, use the parchment paper to lift the bars out of the pan and transfer them to a cutting board. Slice into squares using a sharp knife.
Serve:
- Return the cut bars to the refrigerator for at least another hour to ensure they’re firm and ready to serve. Store in the fridge until serving time.
