Crispy on the outside, juicy on the inside these Breaded Chicken Skewers are flavorful, fun to eat, and perfect for weeknight dinners, parties, or meal prep. Marinated in seasoned mayo and coated with Italian-style breadcrumbs, each bite is packed with savory goodness.

📝 Ingredients

  • 2 lbs chicken breast, cut into ¾” wide strips
  • ¾ cup mayonnaise*
  • 1 cup Italian-style breadcrumbs
  • 1 tsp Mrs. Dash (or any all-purpose seasoning blend)
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • Extra light olive oil or canola oil, for frying
  • 12 small wooden skewers

*You can use low-fat mayo if preferred.

👩‍🍳 Instructions

  1. Prep the Chicken:
Cut chicken breasts into ¾-inch wide strips. Place them in a large bowl. Add salt, pepper, and Mrs. Dash. Stir in the mayonnaise until the chicken is well-coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).
  2. Assemble Skewers:
Thread marinated chicken onto the wooden skewers, keeping the flat sides of the chicken facing the same direction to promote even cooking.
  3. Bread the Skewers:
Spread the breadcrumbs on a large plate. Roll each skewer in the breadcrumbs, pressing gently to ensure even coating.
  4. Cook:
Heat enough oil to generously coat the bottom of a large nonstick skillet over medium heat. Fry skewers for about 3 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F.
  5. Serve:
Transfer to a paper towel-lined platter to drain excess oil. Serve warm with your favorite dipping sauce or side dish.

❤️ Why You’ll Love This Recipe

  • Crispy, juicy, and flavorful with minimal ingredients.
  • Kid-friendly and crowd-pleasing, perfect for gatherings.
  • Quick cooking time after marinating.
  • Easy to prep ahead and fry fresh when needed.

💡 Tips

  • Soak wooden skewers in water for 20–30 minutes before using to prevent burning.
  • Don’t overcrowd the skillet—cook in batches for even browning.
  • Use a splatter screen if oil splashes while frying.
  • Let the skewers rest for a couple of minutes before serving to lock in juices.

🔄 Variations and Substitutions

  • Protein swaps: Use chicken thighs, turkey, or even firm tofu for a twist.
  • Seasoning change-up: Try Cajun, Italian herbs, or garlic powder instead of Mrs. Dash.
  • Oven-baked option: Bake at 425°F (220°C) on a parchment-lined sheet for 20–25 minutes, flipping halfway.
  • Air fryer method: Cook at 375°F (190°C) for 10–12 minutes, turning halfway through.

❓ FAQs

Can I use panko breadcrumbs?
Yes! Panko gives a crunchier texture. You can mix half Italian breadcrumbs with half panko if you like both flavor and crunch.

Can I prep these ahead of time?
Definitely. Assemble the skewers and store them covered in the fridge for up to 24 hours before frying.

Can I freeze them?
Yes, freeze breaded (uncooked) skewers in a single layer. Once frozen, transfer to a bag or container. Cook directly from frozen, adding extra cook time.
