Boursin Chicken

Savor the rich flavors of Boursin Chicken with this quick and easy recipe. Tender chicken breasts are cooked to perfection and smothered in a creamy, herb-infused sauce made with Boursin cheese. Ingredients

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (low sodium if preferred)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
  • 1-2 tablespoons chopped parsley, optional

Instructions

  1. Slice the chicken breasts in half lengthwise to create 4 thinner pieces. Season with garlic powder, salt, and pepper.
  2. Heat the olive oil and butter in a skillet over medium-high heat. Once hot, cook the chicken for 5-6 minutes per side until fully cooked. Transfer the chicken to a plate.
  3. In the same skillet, add the chopped onion and sauté for about 5 minutes until softened and lightly browned. If the skillet is dry, add a bit more olive oil.
  4. Pour in the chicken broth and add the softened Boursin cheese. Stir until the sauce is smooth. Allow it to simmer for 5 minutes, then add the chopped parsley if desired.
  5. Return the chicken and any accumulated juices to the skillet. Let the chicken warm through for a couple of minutes. The sauce should thicken (if too thick, add a splash of chicken broth).
  6. Adjust seasoning with salt and pepper as needed, considering the saltiness of the broth used. Serve immediately.

Notes

  • Chicken is fully cooked when an instant-read thermometer inserted into the thickest part reads 165°F.
