Ingredients

For the Crumble Mixture:

  • 1 ½ cups all-purpose flour
  • 1 ½ cups old-fashioned oats
  • ¾ cup light brown sugar
  • ½ teaspoon kosher salt
  • 1 cup cold butter, cubed

For the Blueberry Filling:

  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 ½ cups blueberries
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Pan: Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal, and lightly coat with nonstick spray. Set aside.
  2. Make the Crumble Mixture: In a food processor or blender, pulse the flour, oats, brown sugar, and salt until combined. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Form the Crust: Divide the crumble mixture in half. Press one half firmly into the bottom of the prepared pan to create the crust layer. Set the remaining half aside.
  4. Prepare the Blueberry Filling: In a large bowl, whisk together the granulated sugar and cornstarch until well blended. Add the blueberries and gently toss to coat them in the sugar mixture. Drizzle in the lemon juice and stir until evenly combined.
  5. Assemble the Bars: Spread the blueberry mixture evenly over the crust. Sprinkle the remaining crumble mixture on top of the blueberries, pressing lightly to adhere.
  6. Chill Before Baking: Place the assembled pan in the refrigerator for 30 minutes to allow the crumble to firm up.
  7. Bake: Preheat your oven to 350°F (175°C). Bake the bars for 35-40 minutes, or until the crumble topping is golden brown and the blueberries are bubbling.
  8. Cool and Serve: Allow the bars to cool completely in the pan before lifting them out using the parchment overhang. Cut into squares and enjoy!
