Ingredients

For Marinade

  • 1 ½ cup plain yogurt (Stonyfield Organic Whole Milk or any yogurt of choice)
  • Juice of 2 lemons
  • Zest of 1 lemon
  • ¼ cup extra virgin olive oil
  • 10–12 garlic cloves, minced
  • 2 tsp dried oregano
  • 2 tsp dried mint
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • ½ tsp nutmeg
  • Kosher salt and black pepper, to taste
  • Large handful fresh parsley, chopped

For Chicken

  • 1 ½ lb boneless chicken breast cutlets

Instructions

  1. Prepare the marinade:
    In a large bowl, whisk together yogurt, lemon juice, lemon zest, and olive oil. Add garlic, oregano, mint, cumin, coriander, paprika, and nutmeg. Season with salt and pepper, then stir in chopped parsley. Mix until fully combined.
  2. Marinate the chicken:
    Place chicken cutlets in a large zip-top bag. Pour the marinade over the chicken, seal the bag, and massage to coat evenly. Lay the bag flat on a baking sheet and refrigerate for at least 2 hours or overnight. Even 30 minutes will enhance flavor.
  3. Cook the chicken: Pan-seared:
    Heat 2–3 Tbsp olive oil in a non-stick skillet over medium-high heat. Shake off excess marinade, add chicken, and cook 5 minutes per side until golden brown and cooked through. Grilled:
    Preheat a grill to medium-high. Oil the grates. Grill chicken 5 minutes per side until internal temperature reaches 165°F. Baked:
    Preheat oven to 400°F. Lightly oil a baking dish and arrange chicken in a single layer. Cover with foil and bake 10 minutes, then remove foil and bake an additional 8–10 minutes, depending on thickness. Let rest for 5 minutes before serving.
