Beef Ramen Noodles

Looking for a quick and delicious dinner? Try this Beef Ramen Noodles recipe! Featuring savory ground beef, creamy peanut butter, and tangy hoisin sauce, this dish is packed with flavor. Ready in just 20 minutes, it combines tender ramen noodles with a spicy kick from sriracha and fresh ginger. Perfect for a busy weeknight, this easy one-pan meal is sure to satisfy.

Ingredients:

  • 1 pound extra lean ground beef
  • 1/2 red bell pepper, chopped
  • 3 heaping tablespoons creamy peanut butter
  • 3 tablespoons hoisin sauce
  • 1/2 tablespoon sriracha sauce (or to taste)
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 3 packages ramen noodles (seasoning packets discarded)
  • Salt and pepper to taste
  • Chopped scallions (optional, for garnish)

Instructions:

  1. Cook the Beef: In a skillet over medium-high heat, cook the ground beef until browned, about 8 minutes, stirring occasionally. Drain excess fat if necessary.
  2. Boil the Noodles: While the beef is cooking, bring a pot of water to a boil for the ramen noodles.
  3. Prepare the Sauce: Remove the skillet from the heat and stir in the peanut butter, hoisin sauce, sriracha sauce, soy sauce, grated ginger, and minced garlic.
  4. Cook the Red Pepper: Return the skillet to the heat and add the chopped red bell pepper. Reduce the heat if needed and cook for a few minutes, stirring often, until the pepper is tender-crisp.
  5. Cook the Noodles: Add the ramen noodles to the boiling water and cook according to package instructions, usually about 3 minutes.
  6. Combine Ingredients: Before draining the noodles, reserve about 4 tablespoons of the cooking water. Drain the noodles and add them to the skillet with the beef and sauce mixture. Toss well to combine, adding reserved noodle water as needed to reach the desired consistency.
  7. Season and Serve: Season with additional salt and pepper if needed. Garnish with chopped scallions if desired and serve immediately.

Notes:

  • Ginger Tip: Keep fresh ginger in the freezer to easily grate it. Use a Microplane grater for best results.
